Tomato pork congee

This tomato pork congee recipe can be made using the rice cooker.

Just add the rice, pork ribs and soup stock at the same time. When the congee is about done, add the tomatoes.

Ingredients
1 cup of rice
12 cups of soup stock
300g prime pork ribs
2 tomatoes (around 300g)
salt to taste

Directions

  1. Wash the pork ribs, parboil and drain
  2. Cook the tomatoes in hot water for about 2 minutes. Drain and soak in cold water
  3. Peel off the skin and cut into quarters
  4. Boil the water, add the rice. Bring back to a boil
  5. Lower heat, and simmer for 20 minutes
  6. Add the pork ribs and cook for another 30 minutes
  7. Add the tomatoes and cook for another 20 minutes
  8. Add salt to taste. Serve
