Enoki Mushrooms

Enoki mushrooms is a very versatile oriental food ingredient. It is popular in Japanese cuisine but also frequently seen in Chinese cuisine.

This delicate mushrooms have long white stems with small caps. It is either yellow or pale beige in colour. When cooked, it has a nice soft crunch.

I almost always have some in my refrigerator. It is a life-saver and I can use it in almost anything I cook. They don't stay in the refrigerator very long partly because they don't keep well and partly because they are so delicious.

It is reputed to be high in protein and substances that are good for cancer prevention and liver diseases. It also lowers blood cholesterol. An overall health food.

Actually I don't need any health reasons to consume it. In fact I like it more than shiitake mushrooms. When we have hot pot, we have it. It cooks fast but it can also take long boiling without over-cooking.

It is easy to prepare and cook. They are usually tightly packed in plastic wrap so you can cut through the packaging and roots at one go. Throw away the blackish roots and rinse the stems and caps under running water and drain dry.
