Vegetarian lotus root soup recipe
The lotus root soup is usually made with prime pork ribs. But there are always exceptions. This recipe is especially created for the vegetarians in mind so it does not include any meat.
It produces a light refreshing soup ideal for the hot summer heat. Although it is not a cold soup, it does helps to expel the summer heat.
If you are not a vegetarian, you can add a few pieces of pork ribs or chicken bones to the soup to enhance the flavour.
Ingredients

40g raisins
450g lotus root 莲藕 (lian ou)
75g fresh lotus seeds 莲子 (lian zi)
40g dried lily bulbs
38g euryale seeds 芡实 (qian shi)
Pinch of salt
1.5 litre of water or vegetarian soup stock
- Wash and slice the lotus root
- Wash the lotus seeds, lily bulbs and euryale seeds
- Bring a pot of water to a boil
- Add the raisins, lotus root, lotus seeds, lily bulbs, euryale seeds
- Bring back to a boil then lower heat to a simmer
- Simmer for about 2 hours
- Season with salt before serving
