Vegetable wonton recipes for vegetarians

How hard is it to find vegetable wonton recipes? Pretty hard, in fact. Wontons are predominantly made with meat, especially fatty pork as they are juicier.

I was quite confident that I'll find some vegetarian wonton recipes but I was wrong. I only managed to find one. I hope I will be able to find more in the near future to share here. If you have one, do let me know.

The best thing about the vegetarian wonton is that not only vegetarians get to enjoy it, we who eat almost anything can also savour such creative parcels too.



Mixed vegetable wontons

This vegetarian wonton recipe uses vegetables and natural ingredients. It does not contain mock vegetarian products that are high in gluten and processed ingredients.

You might think it is weird for me to say this but mock meat products are very common in chinese vegetarian cuisine. Many chinese vegetarians will cook mock fish, mock duck, mock chicken and more. Some of these are made of tofu products and can be quite healthy but recently, a lot of highly processed items have surfaced. They give me indigestion. :(

Use frozen mixed greens to replace the green peas, carrot and sweet corn if it is more convenient.


1 packet of wonton wrappers

Filling
    1 piece of firm tofu (this is different from silken or soft tofu)
    50g fresh chinese or shitake mushrooms
    40g green peas
    60g carrot
    50g sweet corn

Seasonings for filling
    1 1/2 tbsp salt
    1 tbsp sugar
    Half a stock cube
    2 tbsp cornstarch
    1 tsp pepper
    2 tbsp sesame seed oil

Garnish
    1 stalk of coriander leaves or chinese parsley
    Salt & pepper

Directions

  1. Dice the carrot, sweet corn and mushrooms finely. You can use the food processor if you have one
  2. Cut the firm tofu into smaller cubes
  3. Mash the tofu using a sieve or in a food processor
  4. Combine the tofu and the parboiled vegetables together in a big bowl
  5. Fry the mixture lightly in a pan
  6. Dissolve the stock cube with a little water
  7. Add salt, stock cube juice and sugar to the vegetable mixture. Mix thoroughly
  8. Remove from pan
  9. Add the pepper, sesame seed oil and cornstarch. Mix thoroughly
  10. Let the mixture stand and marinate for an hour
  11. Wrap the wontons
  12. Boil water and cook the wontons. Drain and leave aside
  13. Prepare the wonton soup
  14. Pour the soup into serving bowls, add the wontons
  15. Garnish and serve
