Homemade Chinese Soups. It's Magical!

Shrimp soup recipe with chinese yam

This is a quick shrimp soup recipe with chinese yam and fresh shrimps. Although there are only 4 shrimps in this recipe, the fresh chinese yam makes up the bulk. The pea shoots provide the green as well as the crunch.

Ingredients
    200g fresh chinese yam 淮山 (shan yao)
    4 fresh shrimps
    4 kombu knots
    1 small bunch of snow pea shoots
    Pinch of salt
    cornstarch
    500ml water
    1 tbsp dashi powder

Directions

  1. Peel the chinese yam and cut into cubes
  2. Wash the shrimps, deshell leaving the tail. Score the back and remove any dirt
  3. Do not throw away the shrimp shells and heads
  4. Place the shrimp heads, shells, konbu knots and chinese yam to the water
  5. Bring the water to a boil and simmer for 5 minutes
  6. Remove the shells and heads
  7. Add the dashi powder for flavor
  8. Add in the peashoots and cook for about 1 minute
  9. Rub the shrimps gently with salt and dust with cornstarch
  10. Add to the soup and cook quickly
  11. Remove from heat once the shrimps changes colour
  12. Serve
