Beef shank soup with goji and longans

This chinese beef shank soup with goji berries and dried longans is good for people suffering from nutritional anaemia and feels faint.

It is also a good way to cook beef shank because of the slow cooking required. Beef shank is located near the lower leg of the cow and considered a tough cut with tough connective tissues and sinews. When slow cooked, they impart great flavour and rich texture to any dish.

It is a relatively cheap cut so who says you can't have a good nourishing meal on a tight budget?

Ingredients
    450g beef shank
    12g goji berries
    12g dried longans
    1 slice of ginger
    6 cups of water
Directions

  1. Cut the beef shanks into thick slices
  2. Parboil the beef shank for about 5-10 minutes
  3. Rinse the goji berries, dried longans and ginger
  4. Bring the water to a boil in a soup pot
  5. Add the beef shank and ginger and bring back to a boil
  6. Lower the heat and simmer for about 2 hours
  7. Add the goji berries and dried longans
  8. Simmer for 1 hour
  9. Add salt to taste before serving

You may use the slow cooker to cook this soup. You can also use the thermal cooking pot to cook this soup. Follow these steps when using the thermal cooker.

  1. Instead of simmering the beef and ginger for the first 2 hours, add all ingredients into the inner pot
  2. Bring to a boil and cook for 20 minutes
  3. Remove the inner pot from the heat and place it immediately into the outer pot, cover and seal
  4. If you are preparing this for dinner, then start cooking in the morning. If you are preparing it for breakfast or lunch, then do it at night.
