Tomato 番茄 (fan qie) is not a traditional Chinese vegetable but it is very popular in Chinese cuisine. According to the Cambridge World History of Food, it was introduced to China in the 1500s. Interestingly, 番茄 (fan qie) means foreign eggplant. The Chinese likes to use the word 番 (fan) to refer to things originating outside of China. Another good example is 番薯 (fan shu), the name for potato.
The Chinese prefers using fresh tomatoes in soups. It is rare to find Chinese soup recipes using canned tomatoes or puree.
