Chinese soup stocks recipes
using a combination of meat cuts

Many wonderful chinese soup stocks are made with more than one type of meat. Combining chicken and pork or chicken and beef can create surprising flavours. Try some these combinations.


Chicken, pork and ham stock recipe

Ingredients

1 kg chicken bones
600g lean pork
300g ham
20g peppercorn
3 litre of water

Directions
  1. Wash the chicken bones and parboil together with the lean pork

  2. Place the parboiled chicken bones and pork in a stock pot and add water

  3. Bring the water to a boil

  4. Add the ham and peppercorns

  5. Lower heat to a low simmer and simmer for 5 hours

  6. Strain before using



Bone stock recipe

A lot of ingredients used in this stock results in a very flavoursome stock. The stock should have a whitish colour because of the calcium from the bones.

Ingredients

1 kg pork bones
1 pork knuckle
600g chicken carcass
1 piece of ginger
1/2 carrot, cut into cubes
1 onion, cut into cubes
2 stalks spring onions
30g kunbu seaweed
100g dried chinese mushrooms
8 litres of water

Directions
  1. Wash all ingredients and place in a big stock pot together with water

  2. Bring to a boil and simmer on medium heat for 4 hours

  3. Strain and use
