Asian chicken soup
with chinese angelica root

This asian chicken soup recipe requires working with fire to burn off the alcohol in the wine leaving behind a sweet soup. The sweeter the wine used, the sweeter the soup.

Ingredients

1/2 free range chicken
5g chinese angelica root (dang gui)
3 pieces of astragalus (huang qi)
1 piece of dried tangerine peel (chen pi)
1 tbsp goji berries (gou ji zi)
2 red dates
1 bottle of rice wine
Pinch of salt

Directions
  1. Wash and cut the chicken into smaller pieces

  2. Parboil the chicken pieces

  3. Place the chicken, chinese angelica root, astragalus, dried tangerine peel, goji berries & red dates into a small pot

  4. Add rice wine till it covers the ingredients

  5. Bring the pot to a boil

  6. Light a match to the surface of the soup to burn the alcohol in the wine

  7. When the fire dies out, let the soup simmer for another 30 minutes

  8. Add salt before serving
