Astragalus, known as huang qi in mandarin, is a common chinese herb used to boost the immune system and helps relieve fatigue. Adding astragalus to vegetable soups transforms them into chinese herbal soups, gentle tonics for the whole family. If you are new to astragalus, add just a little so that the taste is not too strong.

Broccoli and tomatoes are great vegetables but people with kidney problems should stay away from them.


Astragalus vegetable soup #1

This astragalus vegetable soup is an easy, delicious and healthy herbal soup. Broccoli has loads of vitamins and minerals and is considered indispensable for cancer prevention. But they overcook easily, turning yellow and losing its nutrients. So add it last amongst the vegetables.

Ingredients
1 carrot
1 potato
1 broccoli
1 ear of sweet corn
20g astragalus
2 teaspoon salt
1400ml vegetable stock

Directions
  1. Peel the carrot and potato. Cut into bite-sized cubes
  2. Cut the broccoli into small florets. Wash
  3. Wash the sweet corn, cut into sections
  4. Add the soup stock in a pot, add in the carrot, potato, sweet corn, and astragalus
  5. Bring the soup stock to a boil, lower the heat to a simmer and cook for 20 minutes
  6. Add the broccoli and cook till it is done
  7. Add salt to taste



Astragalus vegetable soup #2

This astragalus vegetable soup is great for detoxification because of the broccoli and tomato pair. They are considered a great anti-oxidant pair. They are supposed to aid in cell repair, balance blood pressure and lower blood sugar.

Ingredients
12g astragalus (huang qi)
230g broccoli
1 tomato
3 fresh shitake / chinese mushrooms
1 teaspoon salt
960ml of water

Directions
  1. Wash the broccoli and cut into little florets
  2. Wash the mushrooms and cut in half
  3. Wash the tomato, score the skin with a knife and blanch it with hot water to help remove the skin. Cut into quarters.
  4. Bring the astragalus and 4 bowls (960ml) of water to boil. Lower the heat and cook for 10 minutes
  5. Add the tomato and mushrooms and cook a further 15 minutes.
  6. Lastly, add the broccoli, turn up the heat and cook till broccoli is done
  7. Add salt to taste
