Tom Yum Soup Recipe

Tom Yum Soup Recipe is a very healthy and delicious Thai soup recipe. It is considered good for flu and colds. It is even under research as a possible cure for cancer.
This is a very quick and easy tom yum soup recipe.
This recipe serves for 4 people and takes about 25 minutes
Ingredients
4-6 cups Chicken Stock
1/2 cup fresh Shiitake Mushrooms, finely chopped
12 raw Shrimp, shells removed
1 stalk Lemon grass , minced
3 Kaffir Lime leaves (available at Asian stores)
3 cloves Garlic, minced
2 Red Chilies, finely chopped
3 tbsp Fish sauce
1/2 can Coconut milk
1 tbsp lime juice, freshly squeezed
1/3 cup fresh cilantro, chopped
1 tbsp sugar(optional)
Extra vegetables Broccoli, Cherry tomatoes (optional)
- Boil the chicken stock in a deep cooking pot
- Add lemon-grass and boil for 2 more minutes. Include the stalk too if you are using fresh lemon-grass
- Stir in garlic, lime leaves,chili and mushrooms into the pot and heat it in medium heat, simmer for 2 minutes
- Add Shrimp and extra vegetables (if any) into the pot and simmer until the shrimp is pink and plump
- Reduce to low heat, add fish sauce, lime juice and coconut milk in it, stir and simmer until hot
- Check for the taste, if salt is not enough add more fish sauce, and if too sour add sugar. Add coconut milk if you taste it too spicy
- Your Thai Tom Yum Soup is now ready to be served hot with fresh cilantro leaves
