Bobby's dinner at Chongqing 重庆 (fit to feed an army)

On my visit to Chongqing China, I had many big meals at restaurants. Many dishes are hot spicy. My fiancee will arrive here in the USA later this year, and I hope to share some of her hot spicy soup recipes with you.
This month, my garden is overflowing with baby bok choy, and I am experimenting with different ways to cook. The bok choy seems to have a very nice light cabbage-spinach taste.
