Turkey wonton recipes - a delightful solution to thanksgiving leftovers

These turkey wonton recipes are great for leftover turkey.

What could be nicer than a couple of turkey wontons floating in steamy wonton soup to counter-act the effects of over-eating during Thanksgiving.

Traditionally, everything in the wonton fillings are chopped and minced by hand. But now, there is the handy food processor.

Mince and mix the turkey and any other chunky ingredients such as the water chestnuts in the food processor.


Turkey and corn wontons

Ingredients
1 packet of won ton wrappers

Filling
4 oz turkey meat
2 oz sweet corn
1 tbsp minced ginger

Seasonings for filling
1 tbsp soy sauce
Dash of pepper
1 tsp cornstarch

Dipping sauce
2 tbsp olive oil
1 tsp minced ginger
1 tsp vinegar
1 tsp fish sauce

Garnish
1 stalk of chopped spring onions

Directions

  1. Ground the turkey (manually shred or process in food processor)
  2. Add the corn and minced ginger
  3. Fold in the fresh prawns
  4. Add the seasonings for filling, with cornstarch going in last
  5. Mix well and leave to marinate for about 1 hour
  6. Wrap the wontons
  7. Boil water and cook the wontons. Drain and leave aside
  8. Combine the dipping sauce ingredients together
  9. Pour over the wontons
  10. Garnish with spring onions and serve

Turkey shrimp wonton

I mentioned that the wonton filling can be processed in a food processor. However, it is advisable to chop the shrimps by hand because they tend to become too mushy due to over-processing. And you want noticeable chunks of freshness, not an undistinguisable mash.

So, process the turkey, water chestnuts and seasonings together in the food processor. Remove into a bowl and fold in the shrimps.

Ingredients
1 packet of won ton wrappers

Filling
240g turkey meat
125g fresh shrimp, shelled, deveined and chopped
50g water chestnuts
3/4 cup of cold water

Seasonings for filling
2 tbsp soy sauce
1 tbsp cooking wine
1 tsp minced ginger
Salt & pepper

Directions

  1. Ground and mix the turkey and water chestnuts in the food processor. Mix in the seasonings for filling
  2. Fold in the shrimps
  3. Wrap the wontons
  4. Boil water and cook the wontons. Drain and leave aside
  5. Prepare the wonton soup
  6. Pour the soup into serving bowls, add the wontons
