Tofu soup recipe:
Tofu soup with tomato

This tofu soup is an easy and healthy chinese soup to put together using 2 of my favourite soup ingredients: tofu and tomato.

Tomato is considered one of the top 10 cancer fighting food. It is really nutritious and packed with anti-oxidants.

It is also believed to help in lowering blood pressure and blood cholesterol.

The bright red tomato color makes the soup "cheery" (if I can describe a soup in this manner).

Ingredients

2 large tomatoes
1 box of silken tofu
soup stock
2 teaspoon salt

Directions
  1. Wash the tomatoes, score the skin with a knife. Blanch with hot water to help remove the skin. Removing the skin is optional. I usually skip this step as I like tomato skin. But it is hard to digest and so may not be suitable for young children and the elderly

  2. Place the tomatoes in a pot and add enough soup stock to cover the tomato

  3. Bring to a boil on high heat. Lower the heat to a simmer and cook for 10 minutes

  4. Bring the soup back to a boil

  5. Add the tofu and let it cook for approximately 2 minutes

  6. Add salt to taste
