Tofu soup recipe: Firm tofu soup
with carrot and bamboo shoot

A yummy thickened tofu soup recipe using firm tofu, ground pork, carrot and bamboo shoot. The carrot and bamboo shoot result in a crunchier soup as compared to silken tofu soup with dried scallop.

Ingredients

1 piece firm tofu
50g minced pork
30g carrot, julienned
30g bamboo shoot, julienned
300ml soup stock
1 tbsp of cornstarch mixture

Seasoning

dash of sesame seed oil
salt and pepper to taste

Directions
  1. Cut the firm tofu into thin strips

  2. Parboil the tofu strips, the carrot and bamboo shoot

  3. Drain

  4. Bring the stock to a boil

  5. Add the vegetables, minced pork and the tofu strips

  6. Add the seasoning

  7. Stir in the cornstarch mixture

  8. Remove from heat

  9. Dash of sesame seed oil

  10. Serve
