This is a beef soup recipe using beef shin, dried tangerine peel and chinese yam.
Beef shin is meat found on the lower legs of the cow. It is also known as beef shank. It contains a lot of connective tissues, and is very lean because the cow uses these the most to move around.
The best way to prepare beef shin or shank is to simmer it slowly in a flavorsome broth.
