Beef soup recipe with beef shin and chinese herbs

This is a free beef soup using beef shin, dried tangerine peel and chinese yam. A crock pot recipe.

Beef shin is meat found on the lower legs of the cow. It is also known as beef shank. It contains a lot of connective tissues, and is very lean because the cow uses these the most to move around.

The best way to prepare beef shin or shank is to simmer it slowly in a flavorsome broth.

Ingredients
250g beef shin
5g chinese yam (huai shan)
3g dried tangerine peel
2 slices ginger
2 litre soup stock

Seasoning
1 tbsp cooking wine
salt to taste

Equipment
slow cooker

Directions

  1. Cut the beef shin into thick slices and parboil for 2 minutes
  2. Place all the ingredients into the slow cooker
  3. Bring everything to a boil
  4. Lower the heat and simmer for 2 hours
  5. Add the seasoning
  6. Serve
