Selling beef noodle soup is serious business in Taiwan.

Competitions are held every year to pick the best shop. The winner can see business soar and will prominently display their awards in their shops.

Freshly made beef is great with these noodle soups, but they are also great for leftover roast beef, stew, grilled or barbequed.

A minimalist cook like me has no qualms adding leftovers to my simple noodle soup to jazz it up. I think this is a great time-saver, a fabulous way of using leftovers and a delicious one-dish meal.

1. Braised beef noodle soup

Ingredients
150g of your favorite asian noodles
2 stalks baby bok choy
150g braised beef
500ml beef stock no.4

Seasonings
2 teaspoon salt
1 tsp soy sauce
1 tsp sugar
Dash of sesame seed oil

Directions

  1. Bring a pot of water to a boil
  2. Cook the bok choy quickly in the water
  3. Remove the vegetables
  4. Cook the noodles in water till al dente next
  5. Place the cooked noodles in a bowl
  6. Slice the braised beef into thick slices
  7. Bring the soup stock to a boil
  8. Add the beef to the stock and the seasonings
  9. Pour the soup into the bowl with the noodles
  10. Serve hot

2. Spicy beef noodle soup

Ingredients
150g of your favorite noodles
2 stalks of bok choy
150g cooked beef fillet
500ml beef stock no.5
Dash of chilli oil
1/2 tsp salt and sugar

Directions

  1. Cut the beef fillet into smaller pieces
  2. Bring a pot of water to a boil
  3. Cook the bok choy and then the noodles in the boiling water
  4. Place in a serving bowl when cooked
  5. Bring the soup stock to a boil
  6. Add the seasonings and the beef pieces
  7. Pour the soup and beef pieces over the bok choy and noodles
  8. Serve hot

3. A light beef noodle soup

Ingredients
150g of your favorite noodles
2 stalks of bok choy
150g cooked beef / beef brisket
500ml beef stock no.3

Seasonings
1/2 tsp salt
Dash of cooking wine

Directions

  1. Slice the beef thinly
  2. Bring a pot of water to a boil
  3. Cook the bok choy and noodles
  4. Place them in a soup bowl when cooked
  5. Bring the soup stock to a boil
  6. Add the beef slices
  7. Add the salt and wine
  8. Pour the soup over the noodles and bok choy
  9. Serve hot

4. Coriander beef noodle soup

Ingredients
150g of your favorite noodles
2 stalks of bok choy
150g cooked beef
500ml beef stock no.5
2 stalks coriander/ cilantro
Salt and pepper

Directions

  1. Cut the meat into small bite-sized pieces
  2. Bring a pot of water to a boil
  3. Cook the bok choy and noodles in the boiling water
  4. Place the cooked vegetable and noodles in the soup bowl
  5. Bring the soup stock to a boil
  6. Add the salt and pepper to season
  7. Pour the soup onto the bok choy and noodles
  8. Place the cooked beef on top of the noodles
  9. Serve hot
