Are you looking for an East Asian beef noodle soup recipe or a Southeast Asian version?
The Southeast Asian versions are represented by Vietnam and Thailand whose pho and 'gway tiao' beef noodle soups are legendary. Silky rice noodles swimming in highly aromatic and spicy beef broth topped with bean sprouts and thin slices of braised beef.
The East Asian beef noodle soups spot springy wheat-based handmade noodles in richly flavored beef broths with beef braised or stewed to melt-in-your-mouth tenderness. See the 2 videos below. The first one shows how the noodles are made and the second demonstrates how tender the beef can be.
Whether East Asian or Southeast Asian, to say that asians are in love with beef noodle soups is an understatement. An entire restaurant can be built to serve nothing but beef noodle soups.
Did I mention that selling beef noodle soup is serious business in Taiwan? Several competitions are held every year to pick the best shop. The winner can see business soar and prominently display their awards in their shops. The Northwestern part of China is also big on beef noodle soups.
Minimalist cooks like us do not have to be so serious. We should have no qualms adding leftover beef; roasted, stewed, grilled or barbequed to our noodle soups to create this wonderful one-dish meal. I think this is a great time-saver, a fabulous way of using leftovers and a delicious one-dish meal.
